The town of Reims, France sits atop a rabbit warren of caves carved into the limestone bedrock. Miles and miles of riddling racks filled with bottles and huge stacks of finished bottles line these caves that once hid the town’s residents from bombing raids in the Second World War. Riddling is the process of gradually moving a Champagne bottle from horizontal to vertical so the yeast residues gather in the neck of the bottle to be expelled during disgorgement.
