The well-used work board at Bass Phillip Estate in the Gippsland Region of Victoria, Australia easily earns the label of palimpsest, a surface (originally a skin or parchment) which bears the traces of much previous writing and erasing. One of Australia’s legendary Pinot Noir estates, Bass Philip was purchased in recent years by investors led by Burgundy legend Jean-Marie Fourrier, but still operates with the same facilities and equipment long used by its idiosyncratic founder Phillip Jones.
