Many people don’t know that South Africa has bee

Many people don’t know that South Africa has been making traditional-method sparkling wines since 1971. Known as Méthode Cap Classique (usually just Cap Classique for short) this category of wine is the fastest growing of any style in the country. These wines are not regulated by the government, but by communal agreement. They must have at least 12 months of aging on the lees (most do 24-36) and can be made of classic varieties (Pinot and Chardonnay) or, intriguingly, with varieties such as Chenin Blanc or Pinotage. Last night I tasted through a whole room full of Cap Classique, and these wines were my favorites. Cape Town is full of little gems. I was so happy to be introduced to @our_local by the folks from @breedekloof_makers last night. Gotta make it back there for shakshuka breakfast!

A new aroma wheel created by the South African Sav

A new aroma wheel created by the South African Sav Blanc association. Interesting because it has local aromas like fynbos, buchu, and khaki bush on it. But really, I have a design problem with ALL aroma wheels because of what I see is an improper ratio of structure to meaning. Yes, aroma wheels are organized, but that organization is heavy and clunky, and the arrangement itself (the wheel, the nested categorization of aromas) conveys very little added meaning to compensate for the awkward readability of the whole. Also? Who has a round wallet? Not to mention the fact that most aroma wheels don't have many of the things I taste and smell in wine. That's why, once upon a time, I created my aroma cards.
