Botrytis, also known as “the Noble Rot,” produces exquisite dessert wines including the famous Sauternes wines of Bordeaux. To those not shooting for unctuous sweet wines, however, Botrytis can be a problem, especially in wet years such as 2011. Indeed, California vintners are battling it even now, as harvest continues.
