Perfect fruit emerges from an optical sorter during harvest in Napa Valley. Using computer vision and jets of compressed air, optical sorters can quickly eliminate individual berries that are overripe, rotten, or otherwise flawed, allowing vintners to deal with only pristine berries. They’re expensive machines, but every winemaker I know who uses one now swears by them.
