Looking like nothing so much as maps of constellations, patterns emerge in the bubbles of fermenting yeasts in a talha, the terra cotta vessels that have been used to ferment wines for thousands of years in Portugal. This particular talha can be found in the cellars of Fitapreta Vinhos in Portugal’s Alentejo region.
